SUMMER PINEAPPLE FRUITY CAKE

We know you love a baking post, and today we have an amazing but simple cake for you!
As you are all probably aware, The Great British Bake Off made a huge comeback this week, and if you didn't know ~ where have you been?! We are still obsessed and love the show, even with the absence of the amazing Mary Berry, Mel and Sue. Let us know what you thought in the comments, are you watching or on a strike after the controversial move? Anyway, the cake we have for you today is a divine and fruity pineapple cake, inspired by this weeks Bake Off signature bake challenge: a fruity cake. 


This cake is a long, lost favourite of ours which we had almost completely forgotten about. Quite a few years ago, we made this cake almost every week over the summer holiday and it is absolutely divine. We have no idea how we went so long without making it. If you love a fruit cake - Christmas or otherwise - then you are going to love this! It is spongey but packed with fruit, and an absolutely delicious bake. It has an incredibly gorgeous fruity and pineapple-y flavour and texture, and it is perfectly moist. With just a few steps to the recipe, you will be making this time and time again, trust us!



Ingredients:
6oz brown sugar
12oz mixed fruit
4oz chopped cherries
4oz butter
6oz pineapple, finely chopped
6floz pineapple juice
2 eggs
8oz self-raising flour

Preheat your oven to 180°C/160°C Fan/Gas mark 4, and line a 9 inch cake tin with greaseproof paper.


Measure the brown sugar, mixed fruit, chopped cherries, butter, pineapple and pineapple juice into a large pan. Mix well and place on a medium heat.


Bring to the boil, and continue to boil for 10 minutes. Then, take off the heat and set aside to cool.


Once it has cooled, add in the 2 eggs and self-raising flour. Mix well until fully combined and then pour the mixture into your pre-lined tin. Place into the oven and bake for 1 1/2 - 1 3/4 hours, or until golden brown and an inserted skewer comes out clean.


When your cake is ready, take out of the oven, and turn out onto a wire rack to cool. 


And that is it! A super simple and easy, but extremely delicious cake made in just three steps. Boil, mix and bake ~ 3 words to live by! 



There is no fancy frills with this cake, just divine and pure deliciousness. Plus, surely with all that fruit in, it can count as at least 1 of your 5 a day, right?! Now, get baking, grab yourself a slice and enjoy with a cup of tea in the last of these summer days!
